Upper Crust Bagels prides itself on being more than just a bakery as it also features New York-style delicatessens at two North Shore locations. 

While most of the baking happens in Deerfield, where it has been in business since 1990, the smoking occurs in Northbrook.

In 2004, owners Ronnie and John Rayyan bought Door Country Fish, a wholesale smokehouse in Northbrook. The wholesale smokehouse smokes and sells fish and meats to various delis in the area.
